With the string, it is smoked in a suspended way in real traditional smokehouses, which gives it a unique taste.
It is a salted salmon with dry sea salt which is much less fatty in the mouth than a flat smoked salmon.
It is essentially sliced by hand for the greatest respect of the salmon.
