By tasting a bite at the Queen, you honor the memory of the wife of Louis XV, Marie Leczinska (1703-1768), daughter of the King of Poland.
From there to say that this dish is particularly appreciated by girls, there is… only one bite!
She married the King of France very young (he was only fifteen, and she, twenty-two). From this idyll were born ten children! But the King quickly abandoned his wife and had many mistresses, including Madame de Pompadour and Madame du Barry.
It was to regain the favor of her royal husband that the Queen asked her cook to concoct an “aphrodisiac” recipe for her, adapting that of vol au vent in individual portions.
If this bite had little effect on the couple, it crossed the centuries and remains one of the classics of our gastronomy!
