This unsavory part of beef has been eaten since the dawn of time. The Romans were already fond of them: they ate the tongues of different animals.
In the Middle Ages, in certain French regions, a feudal right granted the lord the tongue of oxen killed on his territory.
A dish that does not date from the creation of school canteens, but from long before.
Beef tongue remains an offal that can still be found today and which has its fans... It is a classic of bistro cuisine.
Ingredients :
- 1 beef tongue
- 2 liters of strong vegetable broth
- 40 g of butter
- 40 gr of flour
- 40 cl of white wine vinegar
- 1 tbsp tomato paste
- 25 cl of tomato coulis
- 1 tbsp strong mustard
- A 20 groin of pickles
- Chopped parsley
1. Soak the tongue for 1 night in vinegar water (half the vinegar).
2. Cook the tongue for 3 hours in the broth / make a roux with the flour and butter, add 20 cl of vinegar and reduce.
3. Add the coulis and tomato paste, 20 cl of cooking stock, mustard, gherkins cut into pieces and parsley.
4. Cut the tongue into slices and pour the sauce over them.
