But it was in 1381 that the cheese acquired letters of nobility, during the election of Pope Clement VII in Avignon, because it was served at the conclave table. Very quickly it will also find its place at the best tables of the Court of Savoy. Cheese became so well known that it was used as currency at a time when cash was scarce.
In collaboration with the peasants, a culture and an economic activity have just been born.
Thanks to obtaining the AOC Label in 1990 and hard-hitting communication campaigns, Abondance is on the rise! Over the past 10 years, this cooked cheese is quite simply the one that has made the most progress in terms of percentage development.
It all started with obtaining the Appellation d'Origine Contrôlée in 1990 and then the Appellation d'Origine Protégée in 1996. A recognition that guarantees respect for the terroir and the methods of production of milk and cheese, feeding cows until ripening. The PDO also allows the preservation of the Abondance cow breed.
Gradually Abondance will begin to increase its production, and will engage in daring and offbeat communication campaigns. As a result, the people of Chablais have reclaimed their cheese, which has even left its borders!
