Buckingham Palace has unveiled the recipe for the vegetarian quiche that will be served at the coronation of Charles III on Saturday May 6, 2023.

Here is the official recipe for the royal quiche (we already have the mouth watering…)

Spinach, cream, beans and tarragon. These are the main ingredients of the coronation quiche of Charles III. The festivities will take place all weekend in the UK. The population is invited to taste the official dish whose recipe was provided by the royal family.

To succeed in this quiche royale, the smallest details count. Starting with homemade shortcrust pastry, preferably or failing that, organic, artisanal and 100% pure butter to stick to the environmental convictions of King Charles III. Regarding the “of course” vegetable filling, the “coronation quiche” is made up of spinach, broad beans and tarragon, without forgetting a good farmhouse cheddar and whole cream.

Ingredients for the dough:

- 125 g plain flour

- 1 pinch of salt

- 25 g cold butter, diced

- 25 g of lard

- 2 tablespoons of milk

Otherwise, take 1 block of 250 g of ready-to-use shortcrust pastry.

Ingredients for the device:

- 125ml of milk

- 175 ml double cream

- 2 medium eggs

- 1 tablespoon chopped fresh tarragon

- Salt and pepper

- 100 g grated cheddar cheese

- 180g cooked spinach, lightly chopped

- 60 g broad beans or cooked beans

Wash the spinach and remove the midrib. In a frying pan, with the olive oil, sear the spinach leaves over high heat then drain them. Grate the cheddar and thin the sprigs of tarragon.

Spread the shortcrust pastry in a parchment-lined pie pan. Prick the bottom of the pastry with a fork and brush it with the lightly beaten egg white.

Preheat the oven to 180°C.

In a salad bowl, mix the eggs with the cheddar, the tarragon leaves, the coarsely chopped spinach and the cooked broad beans. Add the fresh cream, salt, pepper and mix vigorously.

Garnish the bottom of the dough with the cheddar vegetable preparation.

EBake for 35 minutes at 180°C.

Enjoy warm with a salad while toasting the reign of Charles III.
