Gelling agent for fruit jellies, confectionery with or without pulp.
Yellow Pectin is slow-setting and intended for gelling media rich in sugars (greater than or equal to 76%) and acids (pH between 3.2 and 3.5).
The gel formed by the yellow pectin is not reversible by heating. The final texture is quite firm and not very melting.
Directions for use Yellow Pectin:
Pre-mix dry with part of the sugar, disperse in water, stirring quickly to avoid the formation of lumps. Complete dissolution is obtained after approximately 15 minutes.
Dosage Yellow pectin: 1 to 1.7% depending on use.
