Fat, double fat? Oh no!
On the contrary, it is a very thin piece, a tripe piece. This is the thick part of the beef belly. Its name comes from the Latin "crassus" which means "big" and not "fat"!
Ingredients :
- 800 gr of double-bleached fat
- 1 onion
- 3 tbsp. to s. grain mustard
- 10 cl of white wine
- 10 cl of cream
- oil
- salad sprouts
1. Cut the double fat into thin strips and slice the onion
2. Brown them quickly in a pan with very hot oil
3. Reserve when they are very crispy
4. Deglaze the pan with the wine, add the mustard and cream
5. Reduce
6. Place the double fat on the salad greens and cover with the sauce
