Alexandre Dumas potatoes
Died on December 5, 1870, the famous writer left a remarkable work in his will: the Grand Dictionnaire de la Cuisine, a work which he finished writing a few months before his death and which was published in 1873.
He recounts with his verve his travels, feasts, and discusses nearly 3000 recipes.
Among these, some like elephant feet or turtle are improbable, but others are much more achievable like this recipe for puffed potatoes.

Ingredients for 4 persons :
- 1 kg of mashed potatoes
- 4 eggs
- 10 cl of cream
- 2 tbsp chopped chives
- 2 tbsp chopped parsley
- Salt / pepper / nutmeg
1. Wash and cook the potatoes in a large pot of salted water
2. Separate the egg whites and yolks
3. Beat the egg whites
4. Peel the potatoes and pass them through a vegetable mill
5. Add the cream, yolks and chives
6. Delicately add the egg whites and mix well
7. Make the little balls
8. Fry the balls in oil at 180°.
