Banon, a transformist cheese
Born in the Alpes de Haute-Provence, in a village near Forcalquier from which it took its name: Banon, this little cheese is a bit of a surprise bag.
It does not lack elegance with its dress of chestnut leaves, but you should know that depending on the season, slipping your hand under the dress can lead to misunderstanding.

Indeed, under its petticoat, this soft dough can come from three dairy products: goat or cow in spring and summer, sheep or cow in winter, cow during the shoulder seasons! Because of course, even if they all graze on the foothills of the Lure mountain, and that, consequently, the same grass they graze, it goes without saying, obviously, that these three are not alike, and their milk doesn't taste the same.

In general, if he is dressed in green, he is spring, goat… but possibly cow too.
But if its leafy coat is brown, it is for autumn and winter, so for sheep… or cow, you have to get used to it!
Or else it has spent two to three weeks in a ripening room.
As you will have understood, the banon has different flavors depending on the time of year and the color of its coat.
