Along with Mont d'Or, Bleu de Geix, Morbier and other Tommes, Comté is the emblematic cheese of the Jura massif and the most consumed in France.
In a few numbers :
A wheel of county weighs about 40 kilos and requires 450 liters of milk, from Montbéliarde and Simmental breeds.

The maturing periods vary between a minimum of 120 days and 12, 18 or 24 months.

A recent trend pushes the maturation up to 36 or 42 months.

Do not be afraid of the tyrosine crystals which crunch under the tooth and gently awaken the taste buds: these are not grains of salt but just the mischievous brand of amino acids found in milk proteins.

Finally, to be precise in the middle of all the other categories, know that the Comté is a cheese made from raw cow's milk, with a cooked pressed paste.
