This is a dish born completely by accident.
In August 1930, Reine Geneviève Bourgogne, the wife of the mayor of Dijon Gaston Gérard, was busy in the kitchen. It must be said that the couple invited to dinner one of the finest forks of the time, the prince of gourmets: Curnonski.
In order to hide the accident, she adds white wine and grated Comté then serves the dish.
Curnonski was won over and named the recipe after his host.
Ingredients for 4 persons :
- 1 large poultry cut into pieces
- 25 cl of white wine
- 1 tablespoon of paprika
- 150 g of grated Comté
- 2 tablespoons of mustard
- 25 cl of cream
1. Brown the chicken pieces in a casserole dish
2. Add the white wine and deglaze
3. Simmer for 40 minutes
4. Add the mustard, paprika, Comté and cream
5. Place the chicken pieces and the sauce in a gratin dish and brown for 10 minutes in the oven
