Harenga, you know? I recently discovered this product.
But I think I have found a pleasant compromise: "Herring pearls".
Of a very dark gray color, they have this little taste that obviously reminds herring.
I used it for this starter: Muscovite potato.
Market for 4 people
- 4 medium potatoes
- 50 gr of farm butter
- 10 cl of milk
- 10 cl of fresh cream
- salt pepper
- chive
- 1 lime
- 1 slice of smoked salmon
- 1 jar of herringa
Bake the potatoes in the oven +/- 45 min.
Core the potatoes and mash the flesh.
In a saucepan, heat the milk and cream and add the mashed potatoes.
Off the heat, add the butter, season and add the chopped chives and the finely chopped lime zest.
Put the preparation in a pocket with a fluted tip.
Fill the hollowed potatoes with this mashed potatoes.
This preparation can be made the day before and reheated (over low heat) when serving.
Place a beautiful quenelle of #harenga on the potato and a piece of smoked salmon.
