You can only buy mont d'or from September 10 to May 10, a seasonality inherited from the past.
In the past, when the cows returned to the stables after grazing all summer on the fresh grass of the Jura mountain pastures, they produced less milk.
In addition, in these mountainous areas, the arrival of the winter months was synonymous with snowfall: it then became impossible for the farmers to transport the milk to the cheese dairy where the large county wheels were made.
They therefore began to make smaller cheeses, including the famous Mont d'Or. It was also called the "cheese of the cowherds", hence its other name, the "vacherin du Haut-Doubs".
