Livarot is one of the most powerful tasting Normandy cheeses.
This cow's milk cheese is easily recognized by the strips that surround it. Its crust is smooth, orange in color, its smell is strong. On the palate, Livarot cheese has a pronounced taste, slightly salty, with floral aromas.
He is nicknamed "The Colonel" because of the five strips of sedge that surround him, like the 5 stripes of the rank of Colonel.
The Auge farmers got into the habit, more than a century ago, of surrounding it with sedges. These natural reeds, which grew in the neighboring marshes, enabled them to prevent this soft cheese from collapsing and thus to be able to take it with them in their saddlebag for their day's work in the fields.
