Bresse Chicken
The Poulet de Bresse spends 4 to 5 months in the open air with breeders then 15 to 30 days fattening in spruce. It is slaughtered between 21 and 23 weeks. Bigger than a pullet and a pullet, its flesh is firm and tasty.
The Bresse chicken breeding area covers 3230 km2, spread over Ain, Saône-et-Loire and Jura. The annual production is 1 million heads, a tiny drop of pure water in the world ocean which has billions of them.
All the chicks come from the Bresse Poultry Selection Center, a kind of “scientific laboratory” where the BRESSE BREED has been maintained for more than 50 years.
Breeding conditions are enshrined in A LAW containing several criteria such as: Total freedom for 4 months, noble cereals only (maize and wheat in mash), cow's milk or powder, hyper-controlled manufacturing and quality, final fattening in " spinets” (small openwork wooden cages typical of Bresse for centuries).
