THE ALIGOT OR THE RIBBON OF FRIENDSHIP!
Aligot is a specialty of Rouergue, and more precisely of Aubrac, in the north of Aveyron.
It is a cheese preparation that the shepherds concocted in the "burons" - kinds of small, very hierarchical farm units scattered here and there in the middle of the pastures of the Aubrac plateau, and which have unfortunately practically disappeared - from the volume which was made there with the “pesadou” (lever press) under the authority of the "cantalès".
Once a rustic, ordinary subsistence dish, aligot has become an iconic party dish.
It is also a dish for sharing, hence its nickname "ribbon of friendship".
