The Caribbean acras recipe.
The origin of the word accra is African, it means "vegetable fritters" in the Ewe language, in the ancient kingdom of Dahomey. Famous in the West Indies, we also find accras in Portuguese, Cuban or even Brazilian cuisine.
It was in the 17th century that Norman settlers landed in the West Indies and brought with them the famous cod. It is also used to pay the slaves, who accommodate it with bananas or rice.

Ingredients :
- 400 g of salted cod
- 25 cl of milk
- 300 g of flour
- 4/5 small new onions
- 2 cloves garlic
- 1 pepper
- 1 lime
- Parsley
- Coriander
- 1 C. c. baking soda
- Salt pepper
1. Desalt the cod for 24 hours.
2. Immerse the cod in a large volume of cold water and bring to a boil.
3. Take it out as soon as the water boils and crumble it.
4. Chop the parsley, coriander, garlic, onions, chilli, lemon zest and mix with the cod.
5. Mix the flour and milk well and incorporate this paste into the cod.
6. Mix lemon juice and baking soda.
7. Add to mixture.
8. Leave to stand for 1 hour.
9. Make small meatballs and fries in oil at 180°C
