Auvergne cuisine is based on simple and authentic products: green lentils from Puy, pink garlic, cold meats, cheeses, etc. which have given rise to numerous culinary specialties such as stuffed cabbage, stew, aligot and even truffade. …because the major asset of Auvergne is its cheese!
It’s so good and varied! No less than 5 cheeses with Protected Designation of Origin: Cantal, Saint-Nectaire, Fourme d'Ambert, Bleu d'Auvergne and Salers which are produced in accordance with traditional know-how by making unique cheeses.

Truffade is the fruit of a tasty combination of potatoes and young tomato from Salers or Cantal. It takes its name from the Auvergne dialect “trufa” or “trufla” meaning potato. It is classically eaten with country ham or grilled sausages with a green salad.
