Endives or chicory were discovered in Brussels in 1830 during the Belgian revolution.
A resident of Brussels had hidden chicory plants in his cellar.
- 8 endives from the ground
- 8 slices of white ham
- 20 gr of butter
- 20 gr of flour
- 50 cl of milk
- 150 gr of grated Comté
- Salt, pepper, nutmeg
1. Wash and cook the endives covered in a little fat and a little water
2. Collect the cooking water
3. Melt the butter, add the flour then the milk and the endive cooking juices, thicken
4. Wrap the endives in the slices of ham, place them in a gratin dish
5. Pour the béchamel and sprinkle the cheese
6. Brown in the oven.
