World famous for its sublime silver color, the Herring is a noble fish that lives in Europe in the cold waters of the North Seas.
Called the "wheat of the sea" by the Gauls, it reigned supreme in the Middle Ages during Lent.
In Boulogne-sur-Mer, between November and December, during the traditional "herring season", fishermen go in search of it as it runs along the Opal Coast during its annual migration.
In one night, the Boulonnais fishermen can thus bring up several tons of herring in their nets.
A few hours later, the Coastal Herring is salted then preciously preserved in order to be carefully prepared.
