In Boulogne-sur-Mer, between November and December, during the traditional "herring season", fishermen go in search of it as it runs along the Opal Coast during its annual migration.
In one night, Boulogne fishermen can thus bring up several tons of herring in their nets, within the strict limit of the regulatory quotas, the fishery being MSC certified.
A few hours later, the coastal herring is salted and then carefully preserved within the JC David establishments in order to be carefully prepared.
