Taste the best of French caviar, produced in Aquitaine under the conditions of wild life, expressing fine and persistent flavors.
The first house to have attempted the adventure of producing French caviar, Caviar de France now masters all of its production stages, from the birth of the fry to their rearing in ideal water, with natural food, and without antibiotic treatment, to the extraction and maturation of the caviar.
In the heart of the Arcachon basin, its Acipenser Baeri type sturgeons are raised in pure water basins fed by a natural river in an open cycle, in a sustainable and responsible way.
This species offers a caviar close to Sevruga, with a hint of Osciètra in taste.
After 10 years of growth, the females are refined for 1 month and a half on a sandy bottom in pure water drawn from a depth of 230m, in order to remove any taste of earth from the final product.
At Caviar de France, everything is studied so that the sturgeons can develop in optimal conditions. In low density, they can enjoy a living environment similar to their natural environment.
The quality food, specially selected for sturgeons, is rich in protein, low in fat and devoid of animal meal of land origin.
There is no artificial heating of the water that can accelerate growth. The temperature is only influenced by the seasons.
Matured for 6 to 8 months in a cold room until its optimum stage, the “Ebène” caviar from Caviar de France expresses intense taste power and exceptional persistence. Iodized but not very salty, it brings notes of oyster, sea urchin and green hazelnut.
