In the heart of the Arcachon basin, its Acipenser Baeri type sturgeons are raised in pure water basins fed by a natural river in an open cycle, in a sustainable and responsible way. This species offers a caviar close to Sevruga, with a hint of Osciètra in taste.
Ebony expresses intense taste power and exceptional persistence. Iodized but not very salty, it brings notes of oyster, sea urchin and green hazelnut.
