What is the difference between white and green asparagus?
The white ones grow underground. They are protected from the sun. Their harvest is delicate, you have to be precise so as not to break the stems and the tips.
Purple asparagus also grows underground. They just have the tip out. They color under the effect of light.
And green asparagus grows entirely out of the ground. They turn green with light, the chlorophyll is activated. They are extremely sensitive to temperature change. Right now they are growing under cover. Their taste is more pronounced than their cousins.
And there is a 4th type of asparagus: the wild ones. They are found in nature. They are green but much finer, they have a more intense flavor in the mouth.
