Chef Stéphane Jégo's cuisine is characterized by generosity, a cult of products, a deep respect for traditional techniques combined with free inspiration. The chef works with quick, scathing, precise gestures that are both supple and dry. Each time he finishes a dish, with a shot of sauce poured from a small copper saucepan, a pinch of herbs, a sprinkled with spices, he looks like he's signing a letter.
That's what Stéphane Jégo is all about, and the plate shows it when it arrives on the table: it looks like a hurricane has passed through it, throwing the ingredients randomly on each other. But there is no coincidence: the chef composes his plate in a few seconds and everything is spot on. This is his signature, as is also his sense of just cooking: dewy, blue, seared, even raw.
