January 2009, storm Klaus hit the Landes and left disastrous consequences on the forest massif of the Domaine d'Uza.

The Lur Saluces family then developed the idea of reusing existing agricultural plots, thus redeveloping a dormant agricultural center around the village of Uza. Uncompromising on quality and always in search of excellence, it chooses the cultivation of organic asparagus.

Asparagus has been known since Antiquity (period during which the Greeks attributed it aphrodisiac virtues) and it is one of the “exotic” plants that Catherine de Medici brought in the 16th century, when she came to marry Henry II. But it takes about two centuries before different varieties are created. Shortly after 1800, asparagus made the reputation of Argenteuil, in the Val-d'Oise. It is then considered as a refined product, reserved for the wealthiest.

Asparagus is a so-called “perennial” crop, that is to say that it is planted for several years. It will then be necessary to wait 3 years before obtaining full production, which lasts approximately 8 years. The harvest extends from March to the end of May. It is done by hand using a gouge. This tool is delicately slid along the spear to free it from the soil and separate it from its roots. Then the asparagus is removed from the ground. This work requires a lot of precautions, in order to prevent the asparagus from breaking.

For the production of organic asparagus, the main element is to take care to maintain the life of the soil and to provide it with quality organic matter.
