It is since 1800 that the Cavalieri family has been engaged in the cultivation of wheat in deliberately chosen fields in the heart of Puglia. The agricultural crisis that followed the unification of Italy (1861) did not provide the Family with the usual comforts derived until then from the cultivation of durum wheat, hence the need to venture first into the foreign trade of this particular wheat, then in the construction of the millstones provided for the best grinding of durum wheat. It was in 1872 that Andrea Cavalieri launched this commercial enterprise.

With the legacy of his father's experiences in the cultivation and milling of durum wheat, Benedetto Cavalieri inaugurated, in 1918, the mill and pasta factory Benedetto Cavalieri planned with the clear intention of producing pasta of the first choice with its “fine and selected” durum wheat from the sunny hills of Puglia. Since that day, the motto is:

“First choice pasta with name and surname”

Since its foundation, Benedetto Cavalieri has aimed for innovation and quality by using modern machinery for kneading, pressing and stretching. To prevent the drying of pasta in the streets, a customary practice at the time, he introduced a new system called "Metodo Cirillo", which consisted of drying the pasta in special rooms, equipped with a water heater and a fan, whose times were marked by the experience of the Capo-pastaio.

Since 2005, Pastificio Benedetto Cavalieri has been appointed Learning Center of the Slow Food University of Gastronomic Sciences of Pollenzo (Piedmont). The week-long themed seminars on pasta making are attended by students from five continents.
