The Vinaigreries du Lion, a company founded in Lagny-sur-Marne in 1865 by Mr Mathon passed into the hands of the Chamois family in 1890. It produced a quality vinegar, based on white alcohol.
At the time, France was divided into two parts and the Loire served as a demarcation. The north of France found its raw material in beets while the south of France found it in wine. The vinegar factory produced and delivered the vinegar used to prepare Moutarde de Meaux® Pommery® for many decades.
Mustard has a long history in Meaux. It begins in the 4th century. Charlemagne asked the monks to grow mustard in the bishoprics. In the 18th century, the production of mustard was important and there were several factories in the region. The flour was sold to craftsmen who produced mustards for consumption but also for the pharmacy.
The consumption of mustard, at that time, was of great importance. She erased the taste of food, she gave them flavor. JB Pommery had his mustard business and also a grindstone quarry. In 1890, only the Pommery family still made mustard using the traditional Canon method.
Les Assaisonnements Briards have taken over the production of Meaux Pommery mustard in the purest tradition.
