Tradition & Gourmandises is part of the Soulard house, duck breeder in Vendée since 1936.
It only works with the livers of male mule-type ducks reared in the open air in the Herbiers de Vendée region, with a 100% vegetable diet of French origin.
The Vendée offers a temperate natural environment with large meadows for breeding without stress which would affect the quality of the livers.
At 12 weeks, the corn force-feeding stage takes place at the rate of two meals a day in an air-conditioned room with subdued light.
Extracted hot and cooled immediately, the best livers are shipped overnight to Tradition & Gourmandises. They are worked there by hand according to exclusive traditional recipes and in high-precision facilities.
The regularity in the quality of these foie gras is exemplary.
