For more than 80 years, Saint Jean has been making French-style pastry specialities.
The story of Saint Jean is that of the happy convergence of two men: Emile Truchet and Jean-Claude Ezingeard.
It all started in Romans in 1935 when Emile Truchet, a restaurant owner, decided to mechanize the production of his ravioli to roll the dough more thinly. He therefore invented his own machine: the raviolator.
The story continues with Jean-Claude Ezingeard, son and grandson of “ravioleuses”: these women who have become experts in the art of making ravioli. Thanks to them, Jean-Claude Ezingeard has a family recipe unlike any other: greener because it is slightly more marbled. Sensing the gastronomic potential of his ravioli, he decided to add Comté aged for several months, which he chose himself from the fruit dairies in the neighboring Jura. Then, reproducing the ravioli of Emile Truchet, met a few years earlier, Jean-Claude Ezingeard then decided to launch his first productions: the Saint Jean ravioli were born!
Over the years, Saint Jean will deploy its pastry know-how on a selection of fresh products. First the fresh pasta, taking care to enrich the tastes through varied and frequently renewed recipes. Then come the quenelles, jewels of Rhône-Alpine gastronomy. And finally the Catering range, which reflects all the creativity that the brand knows how to demonstrate through original and gourmet ready meals, ready in just a few minutes.
Maison Saint Jean has always made it its mission to perpetuate the art of fresh pasta “à la française”. And even today, the promotion of this French gastronomy continues thanks to partnerships with great chefs, seduced by the refinement and subtle taste of its culinary specialties.
It is no coincidence that these great chefs trust Saint Jean. Each ingredient is carefully chosen, most often in France, and meets high quality and freshness requirements. Each recipe is developed with finesse and creativity for an always imaginative cuisine. And our Dauphiné ravioli benefit from two of the greatest signs of French quality: the Label Rouge and the IGP, which guarantee respect for the traditional recipe.
