François pasta has been made for 30 years according to the rules of the art using exceptional raw materials and special attention to the resting time required by this living product.

This is the temperature needed to work in good conditions. “The more you heat a butter, the more it loses its flavors and the more it also tends to soften and leak to the sides during the puff pastry stages…. It is therefore processed and calibrated quickly in a rectangle at 5°C, no more”, explains Claude François, the manager of the House.
Their pasta is made exclusively from extra-fine (or extra-fresh) butter, that is to say, made less than 72 hours after the cows have been milked. Charentais AOP butter and nothing else!
The rigor in the selection is the same for the flour, a T55 produced at the Boisseaux cooperative in the Loiret and at the Gaults mill, located 20 km from the workshop. Rigorously chosen raw materials, undeniable know-how and a passion for the profession and a job well done intrinsic to the François family.
