Sakari sauce, a well-kept family secret:
It all started in the 20th century, when Laurent Petricorena brought back from his stay in Argentina the recipe for a spice-based sauce to season mechoui. He passes it on to his son, Jean-Pierre. The latter, a great rebot player, a discipline of Basque pelota, occupies the position of scorer, which is called Sakari in Basque. Its fame is such that the sauce takes this name.
It was his son Laurent, who at the end of the 1960s bottled Sakari and marketed it. The sauces, Forte and Douce, were an immediate success. In the 90s, Clara, her daughter, took up the torch. Since then, she has greatly developed the range. Today, there are about ten gluten-free references, including those with olive oil, curry or even lemon. The sauces are handcrafted in the production workshop in Saint-Étienne-de-Baïgorry.
