The Onetik cheese dairy is located in Macaye, a small village located in the heart of the Basque Country. It is here that Onetik transforms the milk of the breeders of the region into cheese. Sheep's tommes are made, including the famous Ossau-Iraty (to be consumed without moderation with Itxassou black cherry jam), but also cow's and goat's cheeses and mixed milk tommes.

The Onetik cheese factory, which means "Who comes from good" is located in Macaye, in the heart of the Basque Country.

Onetik was born from the association of several cooperatives to transform local milk into delicious cheeses. For 30 years now, Onetik has been collecting, manufacturing and refining its cheeses, including the famous Ossau Iraty, in its cellars.

Milk is collected all around the cheese dairy, from the 150 Basque producers of the Berria cooperative.

These producers respect the quality charter of the AOP Ossau Iraty, a sign of the quality of the milk but also of the quality of breeding of the local breeds of sheep. Red-headed Manech, Black-headed Manech and Basque-Béarnaise graze in the plains and mountains, from Hendaye to the Aldudes valleys.

This GMO-free milk of high taste quality, combined with the know-how of the cheese dairy, makes it possible to produce the best Ossau Iraty cheeses.
