It is 25km from the hills of Sancerrois that our Crottin de Chavignol is made from Alpine breed goat milk only. This breed is the closest, morphologically and in terms of coat color, to the common Sancerrois goat, a breed that has now disappeared. Strict rules govern the Chavignol appellation, from the raising of goats and the collection of milk to the maturing of cheeses. They require that all stages of production take place in its geographical area. It is matured for at least 10 days in our cellars by our Master Cheesemakers. It is thanks to their care and patience that our Chavignol delivers all its aromas over time. Its fine rind is bloomed with a white coating and its smooth, white paste is melt-in-the-mouth. When young, it is fresh and sweet with a discreet goat flavor. Its goat flavor becomes more pronounced as it ages.
It is said that Chavignol, AOP since 1976, appeared in Sancerrois in the 14th century at the same time as the establishment of vines by monks.
The geographical area of Chavignol includes a large part of the department of Cher and extends into Nièvre and Loiret.
How to taste it:
The Crottin de Chavignol will naturally find its place on your cheese platter and it will also lend itself well to cooking.
