Created 40 years ago by François Fonteneau, the oyster farm taken over by his daughter and son-in-law is located in the Marennes Oléron basin on the island of the same name.
In direct contact with the sea, it benefits from an exceptional site and ensures complete control of the production cycle, from spat collection to refining in its 25 ha of clearings. The know-how of the Fonteneau company is based on the exploitation of the claires, the life cycles of the oyster, its breeding in the open sea, its refining in the claires, respect for the different varieties of oysters and their specificities. Scrupulous work that requires a lot of human investment and has been rewarded with 19 distinctions, including 11 obtained at the Concours Général Agricole de Paris.
