Abondance cheese is a semi-cooked pressed cheese made from raw cow's milk.
Its smeared crust is amber in color and bears traces of canvas. Its supple and unctuous paste has an ivory to pale yellow color. Its frank and fruity taste is slightly tangy, with aromas of hazelnut.
Its maturing lasts a minimum of 3 months.
Its fat content is 34% on the finished product.
It has benefited from the AOP since 1990, which guarantees it production in a preserved region and production with traditional know-how.
