French culinary expression: A LA BONNE FRANQUETTE
Here again is a new example of a word that only its participation in a frozen phrase seems to have preserved from a total disappearance from French: “franquette”.
This form modeled from the adjective "franc" and given for regional (of Picardy or Normandy), would have first been known in the 17th century in the expression "а la franquette" in the sense of frankly, before becoming , in the 18th century “à la good casual” which takes on the meaning, still current, of “without making any manners”, “with simplicity”.
Strangely, in the 1950s, we can observe that "to the good flanquette replaces more and more franquette", which, one must believe, has since then counter-attacked and ousted the usurper "flanquette".
The phrase, in the exclamatory form, is a way of putting at ease those who are unexpectedly invited to share their meal.
