EKIOLA is an uncooked pressed farmhouse cheese. We scrupulously respect the manufacturing steps inherited from traditional know-how.
Our herd is made up of 600 Manech black head and Manech red head ewes. These are two local dairy breeds in the Basque Country. Rustic, they are perfectly adapted to their mountain environment and to transhumance.
One of the specificities of our farm is the care we take in feeding our animals. We advocate plant sources traced without GMOs and rich in omega 3.
The use of seeds such as flax faba bean oats barley and plants (grass, alfalfa, clover, etc.) in animal feed improves their health and ours.
Note that only plants synthesize omega 3 fats.
In summer in the mountains they feed entirely on grass.
Adopting the specifications of the AOP Ossau-Iraty means going further in the qualitative approach.
That of Bleu/Blanc/Coeur is to add a health dimension to food.
As players in the food chain, we are aware of our role: if animals are well fed, so are humans!
