The fruits of barberry, from the Berberidaceae family, have a very pleasant sour flavor with a beautiful red color. The main component is berberine, very famous for its many therapeutic virtues. Also rich in vitamin C, barberry is used to make jelly, syrups or lemonades, but its fruits can also be candied and served as capers. Dried rosebuds are mainly used as an infusion.
