The Porc Noir de Bigorre called Porc Noir Gascon, the breed it is from must be 100% from. The Gascon pig is one of the last 6 rustic and local breeds in France, including the Kintoa pig, the Limousin black cul and the Nustrale pig.
Recognizable by its entirely black color, its low ears and its short and thin legs, the Gascon black pig is one of the last six pure French local breeds. Since 2015, two PDOs have protected its meat and charcuterie: “Porc Noir de Bigorre AOP” and “Jambon Noir de Bigorre”. It owes its fame to a small group of breeders and craftsmen who, in the early 1980s, fought to save it when the breed threatened to disappear. Indeed, it was not then conducive to the intensive breeding advocated after the Second World War.
This handful of enthusiasts then decided to raise this pig and transform its meat in its territory of origin, the foothills of the central Pyrenees, under the name “Porc Noir de Bigorre”, for a more than symbolic reminder of the terroir.
