For years, the family acquired old and mostly abandoned olive groves: the result of the region's defection to the cities. But it was in 2018 that Luis and Augusta started the project to build an oil mill in Cótimos. An ambition whose objective is to boost, on its own scale, the economic activity of the parish as well as to enhance this land.
The essence of the olive oil transformation process remains the same as in the time of their ancestors: mechanical. The machines are different: better power, faster, better hygiene. The temperature is now cooler and more controlled. Do not rise above 27°: fundamental rule for respecting the fruit of the olive tree and obtaining extra virgin olive oil.
