It takes 20 delicate steps to get Acquerello rice. We start with the propeller, still today considered the best method for whitening rice by rubbing the grains. The raw rice is aged for at least one year in silos at a controlled temperature below 15°. The starch stabilizes and during cooking it is lost less, each grain increases the absorption capacity of the seasonings. Gem is the vital part of rice and contains most vitamins and microelements. During processing, the gem is separated from the grain, but thanks to a process patented by Acquerello, it is restored. To combine the taste of white rice with the nutrients of brown rice.
