The Noire d'Astarac de Bigorre, a breed of black Gascon chicken, almost disappeared with the industrialization of agriculture. Stubborn breeders persevered in breeding these poultry for their taste quality, now recognized by great chefs.

Today's breeders, mostly young, are keen to produce quality products in a sustainable manner, by controlling the process from embryo to delivery, offering these exceptional free-range poultry a surface area of 10m2 per poultry.

Jean-Paul Beuste, a passionate breeder, presents it to us: "The Noire d'Astarac Bigorre is a living heritage that has crossed the ages to end up on your plate. This breed has managed to preserve its hunting character. A tireless steed, it gives its firm flesh a pronounced and inimitable taste. Our good King Henry was not mistaken in putting it in the pot! The Noire d'Astarac de Bigorre does not tolerate promiscuity or confinement. It only flourishes in complete freedom in wide open spaces. It was in fact with this Gascon chicken that King Henry VI loved and made famous the recipe for chicken in a pot.
