Jewels of Spanish gastronomy, these artisanal products from Galicia and the Cantabrian Sea, south of the Bay of Biscay, have been produced by the La Brujula cannery since 1910.
These mini sardines are selected, sorted and arranged by hand, grilled and steamed before being filleted ready to serve in quality olive oil.
These mini sardines are caught at 5am, when they have an empty stomach, to prevent their flavor from being affected.
They arrive at the market at 6 a.m. and are then emptied and canned from 7 a.m. for optimal freshness and flavor.
