Why "forbidden"? Because this precious black rice was originally forbidden to women and reserved for the consumption of Chinese emperors for its famous aphrodisiac virtues.
More rare because of lower yield than conventional rice, it was also called "the emperor's rice".
Its deep black colour, drawing on dark purple after cooking, is due to an exceptionally high pericarp content of caryopsis in anthocyanins.
The Forbidden Rice is a valuable ally: it offers a firm texture and subtle aromas of hazelnut and toast that sublimate white fish, crustaceans or high-end vegetarian recipes.
