Autumn: the ideal season to enjoy cheeses with strong character!
Cheeses — just like fruits and vegetables — have their own calendar and are therefore seasonal.
Also, to enjoy them properly, it is particularly recommended to respect their seasonality. Indeed, the milk used to make cheese has a taste that varies from one season to another simply because of the animals' diet.
A Cheese obtained with the milk of a cow which has grazed fresh grass, for example, has a different flavor from that made from the milk of a cow which is fed hay in the stable.
But in addition to respecting the seasonality of cheeses, the maturation period is also an impacting factor in the choice and taste of the cheese.
Autumn marks the end of summer and the return of rain. The grass that grows back during this period is rich and particularly fragrant. Autumn cheese therefore has a pronounced taste and very dense aromas. The cheeses to bring to the table are almost the same as those to eat in summer, but with a more spicy flavor.
Furthermore, cheeses matured in autumn are also welcome.
Here is a list of the main cheeses to enjoy during the fall season classified by month:
- September: Gouda, Tête de Moine and Rocamadour;
- October: Saint-Nectaire, Munster, Comté and Gruyère;
- November: Raclette, Laguiole, Maroilles and Banon.
