Created in the 10th century by a monk from the Abbey of Maroilles, this cheese is made in Thiérache, an Appellation d'Origine Contrôlée area, straddling the departments of Nord and Aisne. It is considered the king of cheeses from the North, and presented as the finest of strong cheeses.
The production of Maroilles takes place in a damp cellar, where it is matured for 3 to 5 weeks depending on the format, during which it is brushed and washed in salt water. This is an important operation which will condition the quality of the cheese and give it its magnificent natural orange color, its original flavor and its specific aromas.
The Maroilles has a square shape of 13 cm side and 6 cm thick. It is a raw cow's milk cheese with a soft paste and a washed rind.
