Thanks to the natural humidity that the quartz stores in the rock, our sandstone cave offers perfect conditions for maturing cheese. The art of cheese ripening is perfected in the KALTBACH cave. The cheese is checked at regular intervals during the ripening period. Our master cheese makers decide on the appropriate treatments for the various varieties of cheese. In high season the cave can accommodate up to 120,000 wheels.
Craftsman time for major projects. High quality Gruyère AOP KALTBACH or KALTBACH Emmentaler AOP have a maturing period of 12 to 14 months. We check and taste each wheel of cheese before validating and labeling it.
