Originally from Southeast Asia, the kalamansi is a very small citrus fruit, two to three centimeters in diameter. It is the fruit of the calamondin, a tree with abundant and fragrant flowering that appreciates dry and high areas. Vietnam, whose mountains and highlands occupy two thirds of the territory, is ideal for its culture. Born from a cross between mandarin and kumquat, it offers a wide variety of flavors: sweet, acid and aromatic, it evokes at the same time mandarin, bitter orange, lime and pink grapefruit. More fragile than other citrus fruits, it has such a thin and delicate skin that each fruit must be cut from its tree by hand.
