Traditionally, the burrata was made overnight with unsold mozzarella from the day before: the cheese was pulled and mixed with fresh cream.

This mozzarella, very supple and very melting, kept in its small unitary bucket, will be ideally prepared as it is and accompanied according to your inspiration.
